Don’t miss the historic Laos to Your House three-peat at the next Monday Night Foodball

Last week, Stacy Seuamsothabandith took a victory lap around the United Center on the Blackhawks’ Zamboni . She had nothing to do with the 4–2 loss to the Canucks, but rather was receiving a figurative high five from the organization for winning five large from its Support West Program, benefiting minority-owned west-side small businesses. That’s for the god’s work she does with Laos to Your House, the Laotian food pop-up and virtual kitchen she’s been running with her brother, Chef Keo and husband, Byron Gully, for the past two-plus years. What that means is that this year, LtYH will be using that fresh scratch to focus on their burgeoning consumer packaged goods line of Lao sauces and snacks, and their nascent 17 Provinces Project, which aims to import a specialty item from each of the country’s provinces. It also means that while you can still order from LtYH’s Hatchery HQ each week for Friday pickup or delivery, there will be precious fewer chances to eat it cooked made-to-order from a hot kitchen—or throw back a shot of Henny with patriarch Lucky Seuamsothabandith. There is at least one final opportunity to do that this February 26, when Laos to Your House returns to Monday Night Foodball , the Reader’s weekly chef pop-up at Ludlow Liquors. Laos to Your House Foodball spread Credit: Stacy Seuamsothabandith In the past year, LtYH has rolled out jarred chili crisp, and the spicy dipping sauce jeow bong, along with two varieties of Lao beef jerky. They also imported smaller quantities of red and green tea from Phongsaly province in northern Laos, and indigo-dyed silk scarves from Vientiane. They’ll be bringing limited quantities of those items for purchase, but the truly precious cargo will be Chef Keo’s khao poon moo, a steaming bowl of spicy red curry rice noodle soup. Or laap fried wings, their interpretation of the traditional minced salad in poultry pinion form, crusted with toasted rice powder and chili flakes, with lime and fresh herbs. That dish is a LtYH pop-up debut, along with khao jee pâté, the Lao cousin to the Vietnamese banh mi, here with pork belly and pâté, pickled carrots, cukes, and jeow bong aioli on a baguette. And then there’s the Lao street food sampler: spicy sausage, beef jerky, and papaya salad loaded up with rice noodles and long beans, along with a sticky rice lollipop. You never know when it’ll happen again. Meanwhile, the following six Foodballs are locked down. Look for a March–April schedule to drop later this week.
