Solanux is an Idaho based food ingredient company that produces potato products with high amounts of resistant starch (RS). These products offer a low glycemic response as well as several other digestive health benefits which are currently unavailable in the food industry. Solanux is moving the Glucosan Process through the final stages of product development and setting up the company for early market growth. Conventional processing of potato ingredients, such as potato flakes, flours, and granules, utilizes heat processing to break down the potato tissue. However, the application of heat gelatinizes starch within the potato tissue, making the starch readily digestible. Consequently, these traditional potato products have a high glycemic response and very little resistant starch (RS) content. This is a problem because a high glycemic diet is a factor in the development of obesity and chronic health issues (e.g., diabetes, heart disease, etc.). RS is starch material that is resistant to human digestion and contains additional benefits which improve digestive health.
